One of my favorite cookies to make is my Peanut Butter Butterscotch cookies. I am a huge butterscotch fan. Peanut butter and butterscotch are a sweet combo that hits the spot any time of year! This recipe is super simple and pretty frugal to make.
Peanut Butter Butterscotch Cookies Recipe
If you have a lot of baking to do at one time, this is a recipe you can make the dough ahead of time and refrigerate or freeze until needed.
My husband and I bake this cookie together creating nice memories. One of us rolls the cookie and other other person uses the fork to make the criss-cross and sprinkles the sugar. This is a great recipes to get the kids involved in too!
Peanut Butter Butterscotch Cookies
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 large egg
- 1/2 cup peanut butter
- 1 tsp. vanilla
- 1 1/4 cup flour
- 1 tsp tsp. baking soda
- 1/4 tsp. salt
- 1 cup butterscotch morsels
- sugar for sprinkling
In a large bowl, combine sugar, brown sugar, and butter. Beat with a mixer until fluffy.
Add the peanut butter, vanilla, and egg and beat until smooth.
Add flour and baking soda until fully incorporated.
With a wooden spoon or rubber spatula fold in butterscotch chips.
Preheat oven to 375 F
Place the dough in the refrigerator for 20 minutes so the dough is easier to work with.
Shape dough into 1-inch balls.
Place cookies on cookie sheet about 2 inches apart and make criss cross patterns with a fork.
Bake 6-9 minutes turning pan halfway through.
Yes, these cookies are tasty! If I baked them all up I would probably eat them all myself. Good thing these are perfect for the freezer. Simply roll them in balls and flash freeze. To flash freeze place the cookie ball on a cookie sheet and place in the freezer 10 minutes. This prevents the cookie balls from sticking together once you place them into a freezer safe bag or container. Label the container and you always have a sweet snack in the freezer!
